- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/2 cup cup milk
- 1/4 cup cup water
- 1/4 teaspoon teaspoon salt
- 1/2 teaspoon teaspoon baking soda
- 1 tablespoon tablespoon butter
- 1 teaspoon teaspoon vanilla extract
- 1 cup apricot jam
- 1/2 cup heavy cream optional
Preheat oven to 350°F (180°C).
In a large bowl, whisk together flour, sugar, and salt.
In a separate bowl, whisk together milk, water, and baking soda.
Add the wet ingredients to the dry ingredients and stir until combined.
Add butter, vanilla extract, and apricot jam. Mix well.
Pour into a 9x13-inch baking dish and bake for 25-30 minutes or until golden brown.
While still warm, poke holes in the top and pour heavy cream (if using) over the pudding.
Serve warm, topped with additional apricot jam if desired.
